Refreshing homemade summer drinks

Cool off the summer heat with these deliciously refreshing drinks. I tried these recipes from MarthaStewart.com and wanted to share them with you because they were so easy and simple to make. They will totally satisfy your taste buds as well as your wallet. Here are the recipes.

1/3 cup sweetened cream of coconut
2 cups cubed pineapple
1 tablespoon fresh lemon juice
1 cup ice cubes

Put cream of coconut, pineapple, lemon juice, and ice into the pitcher of a blender, and blend for 15 seconds on high speed. Stop machine, and stir ingredients with a long wooden spoon. Blend for 15 seconds more on high speed.

1 pint strawberries
8 tablespoons plus 2 teaspoons superfine sugar
8 tablespoons freshly squeezed lemon juice
Seltzer water

Puree strawberries and 2 tablespoons sugar in a blender. Set out two glasses, and spoon 3 tablespoons of the resulting strawberry puree, 4 tablespoons sugar, and 4 tablespoons lemon juice into each glass. Stir the lemonade, and add ice. Top off the glasses with seltzer water. Add more sugar if desired.
